Paneer pasanda

 Paneer Pasanda, a popular North Indian dish, is a recipe that is sure to delight your taste buds. This creamy and mildly spiced dish is made with succulent pieces of paneer that are stuffed with a flavorful mixture of nuts and spices.

To create this delectable dish, you will need the following ingredients:


  • 200g paneer
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons ghee
  • 2 cloves
  • 2 green cardamom pods
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 onion, finely chopped
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/2 cup yogurt
  • 1/4 cup cream
  • Salt to taste
  • Chopped coriander leaves for garnish

For the paneer filling:

  • 1/4 cup cashews, chopped
  • 1/4 cup raisins
  • 1/4 cup grated paneer
  • 1 tablespoon coriander leaves, chopped
  • 1/2 teaspoon garam masala powder
  • Salt to taste

Directions:

  1. Begin by preparing the paneer filling. In a mixing bowl, combine cashews, raisins, grated paneer, coriander leaves, garam masala powder, and salt to taste. Mix well and keep aside.

  2. Cut the paneer into thick slices and keep them aside.

  3. In a pan, heat ghee and add cloves, green cardamom pods, cinnamon stick, and bay leaf. Saute for a few seconds and then add the chopped onion. Cook until the onion turns golden brown.

  4. Add ginger-garlic paste and saute for a minute.

  5. Add red chili powder, coriander powder, cumin powder, turmeric powder, and garam masala powder. Mix well and cook for 2-3 minutes.

  6. Add yogurt and cream to the pan and mix well. Cook for 2-3 minutes.

  7. Take the paneer slices and make a pocket in the center. Fill the paneer slices with the prepared filling and press lightly.

  8. In the same pan, add the stuffed paneer slices and cook for 2-3 minutes on each side.

  9. Serve the paneer pasanda hot, garnished with chopped coriander leaves.


2nd method:

Ingredients:

  • 200 gm paneer, cut into medium-sized pieces
  • 1 cup yogurt
  • 1/2 cup cream
  • 2 tbsp oil
  • 1 onion, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1-2 drops of kewda essence
  • 2-3 strands of saffron
  • Chopped fresh coriander for garnish

For the stuffing:

  • 1/4 cup chopped almonds
  • 1/4 cup chopped cashews
  • 1/4 cup raisins
  • 1/4 cup grated paneer
  • 1 tbsp chopped coriander leaves

Instructions:

  1. Combine the yogurt and cream in a bowl and whisk them together until smooth.
  2. Heat oil in a pan and sauté the onions until translucent.
  3. Add ginger and garlic paste and sauté for 30 seconds.
  4. Add turmeric, red chilli, coriander, and garam masala powder and sauté for another 30 seconds.
  5. Add the yogurt and cream mixture to the pan and stir well. Bring it to a boil, then reduce the heat to low and let it simmer for a few minutes.
  6. Add salt to taste and mix well.
  7. For the stuffing, mix the chopped almonds, cashews, raisins, grated paneer, and chopped coriander leaves in a bowl.
  8. Cut slits in the paneer pieces and stuff them with the nut mixture.
  9. Heat a pan with a tablespoon of oil and fry the paneer stuffed with nut mixture on low to medium heat until golden brown. Remove from heat and set aside.
10.In the same pan, add a few drops of kewda essence and saffron strands. Mix well.
11.Add the fried paneer pieces to the pan and coat them with the sauce.
12.Simmer for a few minutes until the paneer is fully coated with the sauce.
13.Garnish with fresh coriander leaves and serve hot. Enjoy your delicious paneer pasanda!

Tomato onion curry



Telugu refers to tomato as rama mulaga or tomato, while Hindi calls it tamatar. It was a tomato curry/koora in the andhra style that I prepared today for rice.It turned out very well.  I thought I would share it with you here. Minimal ingredients are required for this curry. How to make tomato onion curry ? Tomato Gujju curry/ tomato gravy curry or tomato onion curry can be prepared so easily. Here are the recipe ingredients and preparation instructions.

Ingredients:

  • Tomatoes - 4
  • Onions - 2
  • Red chili powder - 2 tsps
  • Salt - 1 or 2 tsps or according to your taste
  • Turmeric powder - 1 tsp
  • Ginger garlic paste - 1 tsp
  • Roasted fenugreek powder/ methy powder - 1/2 tsp
  • Curry leaves
  • Coriander leaves
  • Desiccatedcoconut powder - 2 tsps
  • Roasted coriander and cumin powder
  • Garam masala - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1 tsp
  • Chana dal - 1 tsp
  • Cumin seeds - 1 tsp
  • Oil - 1 tbsp
Preparation:
  1. Firstly cut the tomatoes and onions in desired shape.
  2. Heat oil in a kadai, add the mustard seeds, when they crackle, add urad dal, chana dal and cumin seeds.
  3. Then add ginger garlic paste, fry until nice aroma appears.
  4. Add chopped, tomatoes and onions, fry until mushy.
  5. Then add ,curry leaves to the above fry.
  6. After that add fenugreek powder, coriander cumin powder,turmeric powder,desiccated coconut powder, garam masala, red chili powder and salt in batches.
  7. Stir fry for few minutes.
  8. Finally add coriander leaves and mix well.
  9. Serve hot with rice, chapathi or dosa.

Mealmaker green sorrel leaves curry/ chukka koora meal maker curry recipe

 How to make chukka kura mealmaker curry/ Soya chunks green sorrel leaves curry recipe

Chukka koora is known as green sorrel in english. The leaves are look  similar to palak leaves. The leaves  have thick stems and broad green leaves . The chukka koora leaves are sour in taste. Chukka leaves are available in every season. Chukka koora  is called as green sorrel leaves in english. In Tamil the green sorrel leaves are known as  chukka keerai , in malayalam ambattu cheera, in kannada pundi, in hindi chuka , in marathi  ambat chukka, in kashmiri O'Bej, in bengali chuka palang and in telugu  chukka koora .

We can make many dishes with chukka kura leaves like chukka koora pappu, chukka koora pachadi, chukka koora pulusu. Here I am sharing chukka koora mealmake curry which is the best accompaniment for rice and chapathi

This curry  is very easy to make. Let us know the ingredients required for this curry and the preparation process. 

Ingredients Needed:

  • Mealmaker (soy granules) -a cup
  • Green sorrel leaves/ chukka koora - a bunch
  • Green chilies - 2
  • Onion - one
  • Coriander leaves-
  • Turmeric-A pinch
  •  Coriander powder - 1 teaspoonful
  • Ginger Garlic Paste - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam Masala - 1 teaspoon
  • Salt- As required
  • Oil -1 or 2 teaspoons

Preparation:

  1. Wash and rinse the meal maker well, add some salt and turmeric and bring to a boil.
  2. Pour into a perforated pan.
  3. Wash and rinse the chukkakoora leaves and chop finely.
  4. Cut the greens into small pieces.
  5. Cut the onion into thin slices.
  6. Put the pan on the stove, add two spoons of oil and fry the onions, ginger paste and greens.
  7.  Now add the green sorrel leaves and cook till the leaves are soft.
  8. Then add the cooked meal maker and simmer for a couple of minutes.
  9. Finally add coriander powder, salt, chili and garam masala powder and mix well.
  10. Garnish with coriander leaves. .Make Delicious Green Sorrel Meal Maker Curry. Tastes good with rice and chapatis.
