Paneer pasanda

 Paneer Pasanda, a popular North Indian dish, is a recipe that is sure to delight your taste buds. This creamy and mildly spiced dish is made with succulent pieces of paneer that are stuffed with a flavorful mixture of nuts and spices.

Restaurent style paneer pasanda recipe/ North indian style paneer passnda recipe.

To create this delectable dish, you will need the following ingredients:


  • 200g paneer
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons ghee
  • 2 cloves
  • 2 green cardamom pods
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 onion, finely chopped
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/2 cup yogurt
  • 1/4 cup cream
  • Salt to taste
  • Chopped coriander leaves for garnish

For the paneer filling:

  • 1/4 cup cashews, chopped
  • 1/4 cup raisins
  • 1/4 cup grated paneer
  • 1 tablespoon coriander leaves, chopped
  • 1/2 teaspoon garam masala powder
  • Salt to taste

Directions:

  1. Begin by preparing the paneer filling. In a mixing bowl, combine cashews, raisins, grated paneer, coriander leaves, garam masala powder, and salt to taste. Mix well and keep aside.

  2. Cut the paneer into thick slices and keep them aside.

  3. In a pan, heat ghee and add cloves, green cardamom pods, cinnamon stick, and bay leaf. Saute for a few seconds and then add the chopped onion. Cook until the onion turns golden brown.

  4. Add ginger-garlic paste and saute for a minute.

  5. Add red chili powder, coriander powder, cumin powder, turmeric powder, and garam masala powder. Mix well and cook for 2-3 minutes.

  6. Add yogurt and cream to the pan and mix well. Cook for 2-3 minutes.

  7. Take the paneer slices and make a pocket in the center. Fill the paneer slices with the prepared filling and press lightly.

  8. In the same pan, add the stuffed paneer slices and cook for 2-3 minutes on each side.

  9. Serve the paneer pasanda hot, garnished with chopped coriander leaves.


2nd method:

Ingredients:

  • 200 gm paneer, cut into medium-sized pieces
  • 1 cup yogurt
  • 1/2 cup cream
  • 2 tbsp oil
  • 1 onion, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1-2 drops of kewda essence
  • 2-3 strands of saffron
  • Chopped fresh coriander for garnish

For the stuffing:

  • 1/4 cup chopped almonds
  • 1/4 cup chopped cashews
  • 1/4 cup raisins
  • 1/4 cup grated paneer
  • 1 tbsp chopped coriander leaves

Instructions:

  1. Combine the yogurt and cream in a bowl and whisk them together until smooth.
  2. Heat oil in a pan and sauté the onions until translucent.
  3. Add ginger and garlic paste and sauté for 30 seconds.
  4. Add turmeric, red chilli, coriander, and garam masala powder and sauté for another 30 seconds.
  5. Add the yogurt and cream mixture to the pan and stir well. Bring it to a boil, then reduce the heat to low and let it simmer for a few minutes.
  6. Add salt to taste and mix well.
  7. For the stuffing, mix the chopped almonds, cashews, raisins, grated paneer, and chopped coriander leaves in a bowl.
  8. Cut slits in the paneer pieces and stuff them with the nut mixture.
  9. Heat a pan with a tablespoon of oil and fry the paneer stuffed with nut mixture on low to medium heat until golden brown. Remove from heat and set aside.
10.In the same pan, add a few drops of kewda essence and saffron strands. Mix well.
11.Add the fried paneer pieces to the pan and coat them with the sauce.
12.Simmer for a few minutes until the paneer is fully coated with the sauce.
13.Garnish with fresh coriander leaves and serve hot. Enjoy your delicious paneer pasanda!

Tomato onion curry



Telugu refers to tomato as rama mulaga or tomato, while Hindi calls it tamatar. It was a tomato curry/koora in the andhra style that I prepared today for rice.It turned out very well.  I thought I would share it with you here. Minimal ingredients are required for this curry. How to make tomato onion curry ? Tomato Gujju curry/ tomato gravy curry or tomato onion curry can be prepared so easily. Here are the recipe ingredients and preparation instructions.

Ingredients:

  • Tomatoes - 4
  • Onions - 2
  • Red chili powder - 2 tsps
  • Salt - 1 or 2 tsps or according to your taste
  • Turmeric powder - 1 tsp
  • Ginger garlic paste - 1 tsp
  • Roasted fenugreek powder/ methy powder - 1/2 tsp
  • Curry leaves
  • Coriander leaves
  • Desiccatedcoconut powder - 2 tsps
  • Roasted coriander and cumin powder
  • Garam masala - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1 tsp
  • Chana dal - 1 tsp
  • Cumin seeds - 1 tsp
  • Oil - 1 tbsp
Preparation:
  1. Firstly cut the tomatoes and onions in desired shape.
  2. Heat oil in a kadai, add the mustard seeds, when they crackle, add urad dal, chana dal and cumin seeds.
  3. Then add ginger garlic paste, fry until nice aroma appears.
  4. Add chopped, tomatoes and onions, fry until mushy.
  5. Then add ,curry leaves to the above fry.
  6. After that add fenugreek powder, coriander cumin powder,turmeric powder,desiccated coconut powder, garam masala, red chili powder and salt in batches.
  7. Stir fry for few minutes.
  8. Finally add coriander leaves and mix well.
  9. Serve hot with rice, chapathi or dosa.

Brinjal masala curry 3 types

Brinjal Masala Curries

Brinjala masala , Baingan masala,Vankaya curry , Types of vankaya curries


  We can make different variations of mouth watering curries  with brinjal. Weekly once or twice I cook varieties of brinjal dishes. Stuffed brinjal curries are my favourite ones.
  In south india lots of traditional ways to cook brinjal or baingan masala recipes. 
Here I am going to write some of my favourite recipes.


 

1. Brinjal maala curry type :1


Ingredients:

  • 50gm Red chili powder
  • 1 tsp turmeric powder 
  • 5 gm pepper
  • 5 gm jeera
  • 5 gm coriander seeds
  • 1 tbsp oil


Other ingredients;

  • juice of 1 lime
  • 10 gm ginger garlic paste
  • 10 gm chili powder
  • oil for frying
  • 20 ml ghee
  • 2 gm curry leaves
  • 10 gm crushed jeera (cumin)
  • 5 gm crushed pepper
  • 10 gm chopped garlic
  • salt to taste
Method;
     Roast the masala ingredients and make a fine paste.Marinate brinjal slices with lime juice,salt,ginger garlic paste,chili powder,set it aside for half an hour.Deep fry brinjal slices,and keep it aside .Heat the ghee in a pan ,add chopped garlic,curry leaves ,add masala paste and cook well.Add crushed jeera and pepper,cook for a few minutes.Add fried cashenuts and toss well.Finish by adding little lemon juice.

2.Brinjal curry type 2


Inngredients:

  • 6 brinjals
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric
  • juice of lime
  • 3 tbsp oil
  • A few curry leaves
  • salt to taste
  • 1 chopped onion
Masala ingredients;
  • 6 no chillies
  • 1 tsp cumin
  • 1 onion
  • 5 pods of garlic
  • 1 tomato
  • 1 tbsp vinegar
Method:
Wash the brinjals,make a few slits on both sides.Mix red chili powder, turmeric,lime juice and a little salt into a paste with water and apply it on both sides of the brinjal and set aside for half an hour. Grind the masala ingredients into a fine paste.Heat oil and saute the chopped onions with curry leaves. Add ground masala and fry till it is cooked and the oil separates.Check the seasoning.Add the marinated brinjal s and cook gently on slow fire ensuring the masala coats the brinjal on both sides.
 
 

3.Brinjal curry type 3


Ingredients :

1. One large tomato

2. One big onion

3. Ginger and garlic paste-1 tsp

4. Red chili powder -1 tsp

5. Salt -1 or2 tsps or as required

6. Brinjals -6

7. Tamarind juice -1/2 tbsp.

8. Turmeric powder -1 tsp

9. Cloves-2

10. Elaichi-2

11. A piece of cinnamon 

12. Ghus ghus -1 tsp
some oil,
13. Oil -1 tbsp
 
14.Coriander powder -1 tsp
 
15. Cumin powder - 1 tsp 





Method :
 
   In a pan add some oil let fry onion and tomato slices. Add elaichi,cinnamon,ghus ghus  and cloves . After frying let them cool and grind to a fine paste.In the same pan add some oil, fry the brinjal slices well.Then add oil and add ground masala paste. Then add cumin and coriander powders and salt and red chili powders .Cook for 3 to 4 minutes. 
Then add tamarind juice and cook for another 4 minutes. Mix well and serve hot with rice or roty.

Masala Curry  with capsicum or shimla mirchi has a unique flavor. We can mix this vegetable with any other vegetables like potato, tomato and beans. Here Iam sharing simplified version of green capsicum masala curry aka shimla mirch curry. This capsicum masala curry goes well with rice, pulkha, roti etc.,

 Ingredients :
  • Capsicum - 1/4 kg
  • Onions - 2 big sized
  • Green chilies - 4 
  • Ginger garlic paste - 1 tsp
  • Garam masala - 2 tsps
  • Coriander powder- 1 tsp
  • Cashenut powder - 1 tsp
  • Salt to taste
  • Oil - 1 tbsp
  • Coriander leaves for garnishing

    Method :
    1. In a mixer jar ,grind the onions, green chilies and coriander powder to a smooth paste.
    2. Heat oil in a pan, add the capsicum  slices and fry well.
    3. Add ginger garlic paste and fry well.
    4. Then add  the above paste fry until it turns translucent. 
    5.  Cook in low flame.
    6. Cover and cook for 10 minutes. Stir in between.
    7. Finally add garam masala and mix well and cook for 2 more minutes.
    8. Garnish with coriander leaves and serve hot with rice or roti.
